It's time for a Pinterest failure! Off the top of my head, I can only think of three things so far that I've tried and didn't like from Pinterest. This one was definitely the worst. I saw a recipe for Mexican Lasagna that didn't include meat. That should have thrown up a red flag right there, but I really like black beans, and it sounded like a good, low calorie casserole-type dish. So I forged ahead in the name of "try something new once in a while." Conclusion: it IS possible for delicious ingredients to form together to create something that is most certainly NOT delicious. Even though I covered the pan with foil as suggested, the top layer of noodles was like cardboard. The filling tasted "earthy" and "healthy" as my husband put it. As we were choking it down, I had the sudden urge to slip into a pair of Toms, go buy reusable shopping bags and load up on organic produce at the local commune. But to be fair to the vegetarians, I'm pretty sure the culprit was the no-bake noodles. I always use regular lasagna noodles, but this recipe called for the no-bake kind, and it seemed like a time-saver. My advice: always take the extra time and use the best quality ingredients you can afford. It makes a world of difference!
I forced myself to eat some of the leftovers the next day for lunch, because I didn't want to waste food and money, but I couldn't even finish the plate. I gave the rest to Dusty, AKA garbage disposal doggy, but I'm pretty sure I heard her laughing at me as she turned back to her bowl of stale, dry dog food.
