I've never been a big fan of fish, but in recent months, these fish tacos have become a regular in our house. Well, this is the recipe that I started with. I don't use the Pillsbury biscuits as taco shells, although I'm sure they are tasty. I just purchased plain corn tortillas from the grocery store and lightly crisp them in oil. Fish tacos and corn tortillas are meant to be together, after all. The thing that makes these tacos so delicious is the sauce. I LOVE chipotle chiles and the smokey adobo sauce is so flavorful, without adding a lot of spice. I'm a wimp when it comes to spicy food. Mixing the chiles with lime and sour cream keeps them mellow and delicious. Top with cabbage (another thing I only like on fish tacos) and it's a healthy meal and a break from night after night of chicken!
