Day 10: Black Raspberry Cream Pie

Happy Father's Day!  The two little ones have crashed after lunch with all the Aunts and Uncles at Grandma and Grandpa's house.  I'm hoping to squeeze in a Sunday afternoon nap myself, so this will be short and sweet.  I made this pie today for our Father's Day meal, and it turned out very well.  It was cool, refreshing and creamy.  And most importantly, it was EASY!  Make sure to really get the cream cheese smooth before you fold in the whipped cream.  You don't want lumps in your pretty purple filling. (Which is really black raspberry and NOT blackberry jam-I didn't know there was a difference)  I forgot to take a picture of the whole pie before we cut it, but I did get one of my slice, garnished with fresh blackberries.

Oh!
