Day 22: Marshmallow Scotchies

I was looking through my pins on my Tried and Reviewed board to see what to blog about today, and I came across these Scotcheroos. I made them for a Christmas party last year, and I remember liking how easy they were and how few ingredients were required.  But I did note in my original review that my husband thought they were too "peanut-buttery" and I would like to try something different next time. So today was next time! I had all the ingredients on hand, so I decided to whip up a batch.  I used less peanut butter and added marshmallows.  I love marshmallows.  I would add them to every dessert if I could.  Since these are very much like marshmallow treats, it seemed like an easy marriage.  The first time I made these, I had no problems with the chocolate/butterscotch "frosting", but this time, it was a hot mess.  I used a saucepan to melt the chips against my better judgement.  Use a double boiler!!! The chocolate seized, and I made a mess of trying to get it to the right consistency again.  So my "bars" are a bit of a mess, but they taste delicious! I think next time I'll try some butterscotch topping mixed into the melted chocolate instead of chips.  It should be smoother and I can only imagine it would be tasty!!!

Marshmallow Scotchies

  • 1 cup corn syrup
  • 1 cup sugar
  • 3/4 cup creamy peanut butter
  • 6 cups Rice Krispie cereal
  • 2 cups mini marshmallows
  • 6 oz chocolate chips
  • 6 oz butterscotch chips (or try using butterscotch topping)
In a large saucepan, heat corn syrup and sugar until it dissolves and the syrup begins to boil.  Remove from heat and stir in peanut butter.  Add cereal and stir gently until evenly mixed.  Press into buttered 9x13 pan.  Top with layer of marshmallows.  In a double boiler, melt chips until smooth and then pour/spread over the marshmallows.  Broil for 2-3 minutes to brown any uncovered marshmallows and melt together for gooey deliciousness! Cool and cut into bars.
