I got to try something new for dinner tonight! I saw a recipe for Mini Chicken Pot Pies by Better Crocker. They caught my attention because they were made with Bisquick, which I had a box of in my pantry. Those powder mixes do have an expiration date, so I try to use them up quickly once opened. The other ingredients were things I have around the house all the time: chicken, frozen peas and carrots, onions and chicken broth.
So tonight I pulled out all my ingredients and got started. I had some leftover cooked chicken, so that made it even easier. I simmered the onion, chicken and broth together on the stove, and reached for the yellow box to mix up my dough. DUH! It was pancake mix. Oops. Now what? Once again, Google came to my rescue. I figured they were probably similar, so I checked, and sure enough, you can use either. They aren't quite the same, but it will work. I'm certain Bisquick would be better, because you would get a dry, flaky crust instead of something more bread-like, but the flavor was fine. I just wouldn't suggest doing it on purpose :)
I mixed the pancake mix with milk until it seemed to be a good, doughy consistency. Then I put a tablespoon in the bottom of a greased muffin pan. Then I scooped the filling over the dough, and topped it again with a small spoonful of dough. I don't really know how long I baked them. It was about 10 minutes. I just kept an eye on them and watched for the tops to brown slightly. I have to say, they turned out pretty good, in spite of the fact they were missing the key ingredient! If you already have cooked chicken (canned, rotisserie, leftovers, etc) this makes a very quick, wholesome dinner. It would be a good "clean out the refrigerator" meal, too!
