I've had an unopened bag of hash browns in my freezer for weeks now. I bought them to make a breakfast pizza, but my husband then informed me that he really didn't like breakfast pizza and he only wants breakfast in the morning. Not for dinner. I don't blame him- it's not my favorite meal, either. So, what to do with these potatoes? When I realized it was my week to make a snack for our Sunday School class, I remembered a recipe for breakfast burritos that I've used a few times over the years. Because it's all done in the crock pot, it's so convenient for busy mornings. Or lazy ones :)

But it's comparable to mine, so you get the idea.
Crock Pot Breakfast Burritos
- 6-8 slices of bacon, uncooked, cut into pieces
- 1 pound breakfast sausage, cooked
- 1 bag O'Brien style hash browns (cube potatoes with peppers)
- 2 jalapenos, chopped
- 16 oz Velveeta cheese
- 12 eggs, beaten
Thoroughly grease crock pot (I sprayed mine with Pam) and layer ingredients as listed. Cook 8 hours on low. Serve with flour tortillas, sour cream and salsa.
I have to say, they were a hit in class this morning. Kate Kinnaman told me quote her in my blog. "This is the best thing I've ever put in my mouth." Actually, that's not at all what she said, but I can't remember what she told me. Basically, she liked it (she did go back for seconds after class...). Use this for a special Saturday morning breakfast, holiday mornings, or my favorite-for slumber parties! The kids can help put it all together before bed, and when you get up, breakfast is done!
