Day 51: Tuscan Chicken

As I was making dinner tonight, I realized that it was practically the same dinner I made on Tuesday night.  Oops.  It was different enough and my boys actually ate tonight without the constant, "Pick up your fork.  Eat a bite of chicken.  Finish your noodles.  Stop playing with your salad.  Eat another bite of chicken.  Drink your milk..."  I could on forever with that.  It's almost more work than it's worth to eat dinner sometimes! 

This recipe for Tuscan Chicken is easy because it's all ingredients you have in your pantry. If you pound the chicken breasts to 1/2" before cooking, they are done in about 20 minutes.  I served mine with basil pesto rigatoni.  I really should put the whole recipe here, but I'm phoning this post in tonight.  It's late, it's a Saturday night, and Charlie is still fighting me about bedtime.  I keep hearing him in his crib.  Why do kids refuse to give in to sweet slumber?  I'd switch places with him happily! So, to sum up:  tastes good, try it.  :) 'night!

Once again, not my photo.  My PhotoStream has inexplicably stopped working.  
Anyone have any suggestions on how to fix that?
