Day 59: Freeze Ripe Avocados

I have to say, when I saw this pin about freezing ripened avocados floating around a few weeks ago, I was skeptical.  I didn't even repin it to any of my boards.  But when I ended up with a huge bag of avocados from a friend's tree, I remembered the suggestion.  I figured it wouldn't hurt to try it, and since I didn't even pay for the avocados in the first place, I wouldn't be wasting anything if they turned out to be disgusting!  I knew I was planning on serving Mexican-style food for Charlie's birthday party, so I figured I'd save them a few weeks and make guacamole for the party.  (I kept salsa on hand, just in case-I really didn't have much faith in this one.)

I cut each avocado in half and pitted them.  Then I just put them into a gallon sized Zip-loc bag and laid them flat in the freezer.  The morning of the party (about three weeks later), I pulled them out and let them thaw on the counter.  When I was ready to make the guacamole, I used a spoon to scoop out each half.  I will say, the texture was really "off".  I almost didn't use them, but they smelled fine, and the color was still pretty good.  You would never be able to slice a previously frozen avocado, but if you are just going to smash it up to use in baking or to make guacamole, these will do quite well.  I was a chicken and didn't want to taste the avocado by itself, so I went ahead and made my guacamole, tossed in plenty of lime juice to keep it bright and green, and left it in the refrigerator until my husband got home.  It passed the taste test and ended up being another easy, make ahead party food!

  1. Good to know that you can freeze avocado! I give avocado to O every day, so this will come in very handy for me..... Side note: I want my own avocado tree! -Kate
