Day 73: Cheesy Ham and Scalloped Potatoes Freezer Meal

Today's lunch was another freezer to crock pot meal.  Unfortunately, it was another so/so meal.  Not bad, but not great either.  I think it suffered from poor labeling.  If I was expecting ham and potato soup, it would have been fine.  For some reason, my thin potato pieces did not cook all the way.  I've cooked whole potatoes with a roast in the crock pot before and they are always done by the time church is over.  These thinly sliced ones didn't cook at all.  It may have been because of all the liquid in the pot.  So, as a last ditch effort at saving the meal, I pulled out the potatoes and fried them.  Yum :) The cheesy broccoli and ham that was left in the pot was good.  It was a bit salty, but it was flavorful.  Next time I would chop the potatoes into small bits like you find in a soup.  Served up with a crusty loaf of bread, you would have yourself a nice hearty meal for the winter.
