Day 83: Spicy Honey Glazed Chicken

I have a new favorite: boneless, skinless chicken thighs.  I've always preferred dark meat to white, and thighs are the supreme cut when there's poultry being served.  I don't know why I've never purchased them before, but a few weeks ago they were on sale and so I bought a large pack and replaced chicken breast in several recipes with chicken thigh.  I think I like them because the portion sizes are so much better.  Some chicken breasts look like they went straight from breast augmentation surgery to the slaughterhouse.  Thighs, on the other hand, are small and already thin enough that they don't require pounding to cook evenly.  They deliver a tasty little morsel of meat that doesn't get dry and cooks quickly.  That's a keeper!

Today for lunch, I made Spicy Honey Glazed Chicken via Nutmeg Nanny.  I cut the recipe in half because it was just for the two of us, and it was amazing!  It was just a simple spice rub made up of things you already have in the pantry, but sometimes the simplest things can surprise you!  The pin that I have on my Main Dishes board describes it as "for the crock pot" but it not a slow cooker recipe.  I was drawn to this one because it had simple ingredients and it cooks under the broiler! A nice option for summer when you don't want the oven on.  It cooked up quickly under Low heat on my broiler.  I followed her instructions exactly (except for the paprika- I discovered I'm out so it was omitted) and they cooked beautifully and tasted amazing.  If you're looking for a quick and easy week night dinner, this is it!
